Our Story

Hey there! I'm Tracey — mom of two energetic boys, a dog, and two cats. I work full-time as a marketing manager at a highly regulated Fortune 1000 med-tech company, but I’m happiest when I’m getting creative in the kitchen and feeding people delicious food.

Three years ago, my family made the big move from St. Paul to Apple Valley. We absolutely love our new suburban life—the spaciousness, the fantastic schools, and the wonderful community. But there’s one thing we didn’t expect: the food scene is a bit of a desert. Craving pizza? It’s always square cut. Want cookies? You're limited to grocery store options or chain bakeries. So, I rolled up my sleeves and started focusing on baking my own delicious treats, much to the delight of my family (and their rapidly growing appetites!).

I’m excited to share my homemade creations with you. Minnesota Bakeshop is a microbakery, focused on using top-notch ingredients to whip up scrumptious, handcrafted goodies that bring joy to your home. From our fun and festive 'Confetti Creamwiches' to our irresistible 4.5 oz chocolate chip cookies made with two types of chocolate, every bite is a celebration of flavor and quality.
